Cauliflower, Feta & Mint Bites With Chilli Jam

These cauliflower bites are so addictive! Serve with a really good chilli jam, or try with squeeze of lemon and Greek yogurt. Either way, they are just delicious. They can also be made either in a pan or an air fryer!


2 tbsp Nuttelex

1 whole cauliflower grated (or 900g)

1 large red onion (diced)

3 eggs

100 g plain flour

1 pinch white pepper

1 tbsp fresh mint chopped

1 tbsp fresh dill chopped

200 g fresh sheep's milk feta cheese (mashed with a fork)

olive oil (for frying)

To Serve

1 tbsp fresh coriander chopped

1Place Nuttelex and the diced onions in a large frypan on medium heat, until onions soften & are lightly coloured. Next add the grated cauliflower and sauté for 2 minutes or so. Then, decant mixture in a colander to drain any excess liquid and to cool down.

2In a large bowl, place eggs with flour and whisk until well blended. Next, add pepper plus the chopped dill and mint and mix well. Fold in mashed feta plus the cooked onions and cauliflower. Mix well with a fork to form a batter. If batter feels runny, add a little more flour.

3On medium-high heat, add enough Nuttelex to cover the base of a large non-stick frypan and spoon dollops of Nuttelex for each fritter. Don't overcrowd the frypan. Turn fritters and cook until both sides are slightly golden browned, drain on absorbent paper towel.

4Serve with chilli jam and fresh coriander. Or fresh lemon and Greek yogurt.
