Vegan Cereal ‘Prawns’

A classic Singapore dish with a twist...oyster mushrooms replace prawns retaining all the classic crispy, buttery flavour of the original. Thanks to Chef Berlinda who created this for the New Lunar Year celebrations.


200g oyster Mushrooms (tear mushrooms into half lengthwise)

30g plant based Nuttelex

1 handful curry leaves

1-2 small red chilli padi (sliced thinly)

120g vegan cereal (toasted/roasted in pan)

2 tsp icing sugar (combine with cooled roasted cereal)

vegetable oil for deep frying


50g plain flour

50g corn starch

1 tbsp baking powder

1/8 tsp mushroom seasoning

salt and white pepper to taste

100g cold water


1Combine all the ingredients well for the batter mixture

2Dip the mushrooms into the batter, coat evenly and fry mushrooms in batches on high heat till golden brown.

3Drain excess oil from fried mushrooms and set aside.

4Heat up Nuttelex in a pan on medium heat. Stir fry curry leaves & chilli padi till fragrant

5Add in mushrooms and cereal mixture. Toss till well combined.

6Transfer to serving plate and serve.
